My Mum's Zesty Lemon and Lime Poppyseed Syrup Cake This is a winner in our household! The littlies wrap their slice up for their play lunch and the biggies for their morning tea at the office, by that time there is none left for my husband so mum takes in a whole one to the butcher shop and they devour it in 5 minutes. I hope your family enjoy as well.
Ingredients Cake 1 cup sr flour ¾ cup caster sugar ¼ tsp salt 150ml rich glen zesty lemon and lime olive oil 3 eggs Grated rind of 1 lemon or lime 1 cup ground almonds 1/3 cup poppyseeds Syrup Juice of 1 lemon or lime ¼ cup caster sugar
Method Cake Beat oil an sugar for a few minutes. Add eggs. Beat well 2 minutes. Add lemon rind, flour, salt, ground almonds and poppyseeds. Pour into greased and lined tin (round or loaf) and bake at 160 °C untily lightly golden. Remove from oven, pour over syrup. Syrup Just whisk until sugar dissolves, drizzle over hot cake. Allow to cool, cut and serve or serve as a dessert with double cream or gundowing vanilla bean ice cream. Deeelicious!
