Method
1. Microwave cashews on high for 2 minutes, stir, microwave another 1 minute, or until crunchy and golden.Cool.
2. In a food processor, blend the chillies, ginger, garlic, add the herbs and 100ml of Rich Glen extra virgin olive oil, blend to a paste. Add sugar, fish sauce and lime juice and blend again. Gradually pour in remaining oil to make a smooth paste.
3. Store in an airtight jar or container. refridgerate, keeps for about 6 weeks.
