Method
Cake
Beat oil an sugar for a few minutes. Add eggs. Beat well 2 minutes.
Add lemon rind, flour, salt, ground almonds and poppyseeds.
Pour into greased and lined tin (round or loaf) and bake at 160 °C untily lightly golden.
Remove from oven, pour over syrup.
Syrup
Just whisk until sugar dissolves, drizzle over hot cake. Allow to cool, cut and serve or serve as a dessert with double cream or gundowing vanilla bean ice cream.
