Flourless Chocolate, Manadrin and Almond Cake
with Mandarin Syrup


Ingredients
8 Mandarins
500g Almond Meal
10 Eggs
500g Caster Sugar
1 Cup Dark Chocolate
1 tbls Baking Ppowder
1/2 Cup Mandarin Oil

Method - Cake
1. Grease 28cm cake tin with Mandarin Infused Extra Virgin Olive Oil. Sprinkle with almond meal.
2. Place peeled manadrins and skin of one mandarin in heavy based saucepan.
3. Cover well with water and boil for approx 30 minutes. Drain keeping liquid and allow to cool.
4. Place mandarins in the food processor with chopped chocolate, eggs, sugar, mandarin oil and baking powder, puree 30 seconds and fold in the almond meal.
5. Bake approxinately 1 hour on 180°C.

Method - Syrup
1. Bring 1 cup of sugar and the mandarin water you put aside to the boil for 20 minutes.
2. Pour over warm cake.
2. Serve with a dollop of double cream.
