Method
1. In a saucepan, add the cup of olive oil and breadcrumbs. Stir over medium heat until the breadcrumbs turn brown. Remove from heat and allow to cool.
2. Grate the apples, squeeze the juice out of the apples, saving the juice to drink.
3. Add the sugar, cinnamon and vanilla sugar to the apples, mix thoroughly.
4. Using three sheets of filo pastry, brush olive oil between each layer. Cover unused filo with a damp cloth so it doesn't dry out.
5.Sprinkle the filo lightly with the breadcrumb mixture, then sprinkle with the apple mixture 1/2 way. Drizzle with the runny cream and roll up to form the strudel. Squeeze the end tightly.
6. Place onto greased oven tray, brush with olive and sprinkl with raw sugar.
7.Bake in moderate oven, approx 35 minutes.
8.Allow to rest for 5 minutes, cut and serve with cream. Delicious! |
